Another magical evening at Pelican Eyes as we explored the wine paring possibilities of the local flavors.   San Juan del Sur is blessed with a rich bounty of seafood.  The local fishing industry is very active and harvests a variety of catch including fish, octopus, conch, shellfish, and more.  The eveniing took advantage of the fresh seafood and carefully paired it with outstanding whites and a vesatile Casillero del Diablo Pinot Noir.

Octopus carpaccio with a beautiful Argentinian Chardonnay was among the excellent pariings. Also on the menu was a perfectly done grouper morsel with a wonderful Chilean Sauvignon blanc and the seafood rice stood up to a Chilean Pinot Noir. Like a fine wine the music made us smile and dance.
