Wine Wednesday at El Timon

We returned to El Timon to find an updated and expanded kitchen, new menu and a highly trained staff.  Their commitment to excellent and evolving seafood dishes was evident.  New offerings include Fish fillet a la parmesana, a fantastic house made lobster ravioli, chicken roulade and both fish and octopus carpaccio.  The focus on wines was refreshing as the selection reflected a broad range of flavors mainly from Chile and Argentina.

Once again El Timon showed off its kitchen and service with an outstanding event. Beautifully decorated tables set the stage for a truley fun and flavorful evening. Each course was elegantly presented and perfectly paired. Its hard to pick a favorite but the lobster ravioli stood out as did the Parmesan Filet on a bed of organic lettuce. The octopus carpaccio was delicious and abundant pairing superbly with the Casillero del Diablo Carmenere. This could be the beginning of something great on Wednesdays.
