Champagne Tasting

A beautiful and effervescent tasting at Pelican Eyes.  Technically a sparkling wine tasting with wines from Argentina, Chile and France.  The wines were paired with a variety of flavors to test the wisdom that champagne pairs well with many foods .  The first wine was a Colon from Argentina with ripe melon and fruit forward flavors that mellowed as the wine breathed.  A very drinkable and pleasant wine with a hint of sweetness that complimented the breaded fish fillet and fries well.

The second bubbly was a French sparkler, Comte de Laube Brut, that showed its elegance and refinement with nice acidity in perfect balance.  A great value that paired nicely with a tomato and cheese crostini.  The third offering, a Chilean Santa Carolina Brut, was the hit of the evening surprising everyone with its fruit forward style and perfect acidity.  An excellent value that combined well with grilled chicken with sauteed vegetables.  As the jazz played and the crowd enjoyed the pairings we introduced the final wine a Concha y Toro Brut.  An unpretentious wine that went well with the creamy pasta in Champagne sauce.

The evening was proof positive that champagne style wines pair well with a wide range of flavors and make for an extraordinarily lively event.

Breaded Fish Filet and Fries & Colon Brut – Argentina

Crostini with tomato relish and cheese & Comte de Laube Brut

Comte de Laube Brut & Santa Caroilina Brut – Chile

Pasta in Champagne sauce & Casirello del Diablo Brut – Chile
